Pig in Blankets Toasted Sandwich

What you’d need:

  • 3 x Bacon 840058A
  • 3 x sausages
  • 3 x slices brie
  • 2 tbsp red onion chutney
  • 1/3rd Mediterranean Cristal Bread 13477
  • Prep time 10 mins
  • Cook time 10 mins
  • Portions 2

Step-by-step method:

  1. Wrap 3 sausages in a slice of bacon each place on a baking tray and cook at 180 degrees for 15-20 min or until your sausage is cooked all the way through.
  2. Once the pigs are cooked, slice the bread in half and add your chutney, brie and the Pigs in Blankets.
  3. Heat a saucepan or panini machine and add the sandwich, cook until the cheese is melted and the bread is toasted.
  4. Serve with Gravy to dip!

Step-by-step method:

  1. Gently melt chocolate over a bain marie
  2. Pour into a piping bag
  3. Drizzle over the yumyums to resemble a mummy leaving a gap to attach the eyes using a little bit of chocolate to make them stick.

What you’d need:

  • Scone
  • Passionfruit curd
  • Fresh raspberries
  • Clotted cream
  • Vanilla essence
  • Prep time 20 mins

Step-by-step method:

  1. In a mixing bowl beat together the clotted cream, vanilla and raspberries until nicely rippled.
  2. Slice scone in half and smear a healthy amount of the clotted cream and passionfruit curd onto the scone and enjoy.

Whipped Goats Cheese with Fig and Honey Compote served in a Potato Basket (Canape)

What you’d need:

  • 85g honey
  • 400g figs quartered
  • 2tbsp balsamic glaze
  • 2tbsp lemon juice
  • 10 Potato Basket 833382
  • 225g goats cheese
  • 10g double cream
  • Prep time 10 mins
  • Cook time 10 mins
  • Portions 2

Step-by-step method:

  • Add the fig, lemon, honey and balsamic to a pan and simmer for 10mins until thickened, leave to cool
  • Bake the potato basket for 7mins at 150 degrees.
  • Whilst the potato bakes add the goats’ cheese, cream and some seasoning to a bowl and whisk till combined and pipeable then add to piping bag.
  • Once the potato is cooked, allow to cool for 3 mins then pipe in the goats, add the fig compote and serve.
